The biggest and most noticable difference is the length of the stole. Visitation stoles are about 50" in total length, including fringe. This means it will drape about 23" long on each side when you wear it around your neck. Classic clergy stoles are longer, about 88" in total length, including fringe. This means it will drape about 42" long on each side when you wear it around your neck.
Depending on your height, visitation stoles will probably show to just above your waist. On the other hand, classic clergy stoles will be about knee-length.
Visitation stoles, as the name implies, are mostly used for hospital or home visits. That is why they are shorter and smaller, to be more compact for ease of portability as you take it around with you.
Classic clergy stoles are worn in more traditional church settings, usually on top of a robe or cassock. These are available in more styles and colors because they can be used in more environments.
